Creamy Maca Powder Fudge

Foods that aren’t developed for a fad, foods which are made to nourish. We’re giving these foods and ingredients a little jig, stir and shake and renewing our old time favourites and that’s the beauty of it.

We’re seeing a whole lot of this makeover even just in our snacks and treats. Treats you say? YES. Because who doesn’t love a little treat, and even better one that is made to enrich your health. Enter"¦raw food.

Raw foods have been a major contributor to the transformation of our diets and there’s a fairly simple explanation why. When we eat foods as close as possible to their natural state we are able to access more of their nutrients because these have not been lost in the cooking process. And we can revisit some of the golden oldies with some raw nourishing goodness.

Flavours such as chocolate, caramel and vanilla are all on the menu when it comes to a nutrient rich, raw treat delight. Combinations of ingredients such as raw nuts, seeds, coconut oil, cacao, dates, berries, maca powder, mesquite, honey, maple syrup, vanilla powder and coconut will take you on the journey to remake your old favourites. These are the ingredients that will ignite a flavor storm on your taste buds and enhance your body with quality nutrition.

A personal favourite of mine is fudge"¦creamy caramel deliciousness and simple enough to make and eat without the guilt of the sugar-laden fudge we may know. In my raw creation of this little wonder the beautiful macadamia nut creates the cream of the fudge and provides us with good quality fats, maca powder enriches the caramel sensation and benefits our hormonal health, raw honey gives a little sweet kick whilst coconut oil offers all the anti’s for bacteria, virus and fungus - just as a start! A quick whizz in the food processor and into the freezer and you’re ready to make over your nourished treat time happiness. Enjoy"¦ I x


RAW MACA FUDGE
1 cup macadamia nuts (just replace with super chilled coconut cream if you have any nut allergies)
1tbsp maca powder (optional)
1tbsp raw honey
1⁄2 tsp vanilla or 1⁄4 tsp seeds from a vanilla pod
pinch celtic sea salt
1 tbsp coconut oil

● Place macadamia nuts in a food processor and blend until they become very soft and fine (or just use the chilled coconut cream).
● Add remaining ingredients and continue to blend until a paste forms.
● Line a loaf tin with greaseproof paper and pour mix into the tin and freeze for 2-3 hours prior to serving.
● Cut into approximately 8-10 squares or wedges.
● Serve immediately from the freezer, as the beautiful fats will melt fairly easily.
● Store in freezer up to 3 weeks, if you can resist the temptation.
